Walnut oil, a typical Vaudois product, is now protected thanks to its Appellation d’Origine Protégée (AOP) or Protected Designation of Origin (PDO) obtained in June 2020. It is produced at the Sévery Mill near Morges. This oil mill, which has been operating for centuries, has its own shop and organises group visits. A delicious way to discover this traditional know-how perpetuated for generations by the Bovey family.
Alongside conventional condiments, Walnut oil has always had a special place in the kitchens of Vaud. As it is tastier at room temperature than heated, it makes delicious salad dressings.
The number of oil mills in Switzerland has significantly decreased over the centuries. The Sévery Mill near Morges is one of the last ones producing the golden liquid throughout the year. The Mill has been managed by the Bovey family for seven generations. Two distinct craft techniques are used : cold pressing through a metal stand and traditional pressing whereby the oil is extracted from the roasted nut paste.
The Sévery Mill is open six days a week. It welcomes groups of visitors in the core area of the mill, producers that have brought their nuts to be pressed and gourmets in the shop. In addition to the oil, delicious mustards and other condiments with the Sévery Mill logo have been available from the shop for a few years.
