The Les Moulins bio cheese factory is located in the village of Les Moulins on the road heading up to L’Etivaz. This factory was created in 1970 and is owned and operated by local milk producers.
After 11 years as a cheese maker at Les Moulins, Pierre Buchillier became an independent milk buyer in 2009, thus saving the cheese factory that was being closed by the group that was running it.
He rents the building and the machines of the cheese dairy to produce organic Gruyère AOP and its cheese specialties. All his products are made by hand and the regional origin of the organic milk is guaranteed.
The cheesemaker produces about 1'500 tons of milk per year, mainly transformed for the production of the famous Gruyère AOP. With his wife Marie-Noëlle, Pierre Buchiller also sells his products in the cheese store, which is open 7 days a week and also features other Authentic Products of the Pays-d'Enhaut.
In front of the store, you will find a vending machine open 24 hours a day. You will find cheese (Gruyère, Etivaz...etc), fondue, milk, butter, eggs, and pre-cooked bread. The payment is only done in cash.
